Default Christmas Dessert Pizza

I've spent the last couple of weekends woking on this one.

Take a pizza base (or make your own: even better) and cover it with a thin layer of (warmed) jam just as you would to a cake before applying the marzipan/icing. On this add a thick layer of mincemeat.

Top it with thin rings of dessert apple brushed with cinnamon, glace cherries, pineapple cubes rolled in brown suger (they caramelize) and cubes of stilton cheese. Add blanched almonds and sweet chestnuts if you like them.

Cook as normal BUT about a minute before it's done take it out and sprinkle with chocolate drops and small marshmallows. Replace in the oven for the last minute.

Being a 'pudding' rather than main course, a six slice pizza will serve that many.

Sounds yummy! What kind of jam did you use? Where I used to live I got burried in pecans every fall. That would have been a good use for a handful or so of them I'm thinking.

Sandi: I used homemade plum jam (because I had it in stock) but apricot or cherry work well also (it needs to be 'drupe' jam not berry jam).

Kev: get cooking.

I love it when I find a new word. "Drupe" = fleshy fruit with a hard stone and a skin. Thank you P'ter.
By the way the pizza sounds delectable except that I consider mincemeat unpalatable.
