Brown bubbly pies

Well I did it! I had a craving for them again and decided to satisfy it by making them again. I don't know if I did them right but I did them basically by the recipe in DLG to PERN. These are done with blackberries.

Those look very good. Do you make regular pie crust and then fill with fruit? They look large large size muffin or cupcake pans. Mmmmmmm. I could make some myself! It would be fun if you could make designs on the tops (harp, or something? not anything too elaborate).

They do look good, although I don't really care for black berries.

I prefer blueberries, and when they are in season, they're not too hard to find up in my neck of the woods.

We have the wrong soil for them where I live but up in the hills there is a very nice version.
I always saw them as blueberries.
I wonder why you don't get tinned blueberries. They are so expensive over here.

Edi, thats what I always thought was in them...was blue berries...but I think that R'na's Blackberries would work very nicely indeed...I think I am going to have to try doing a few of these around the holidays this next Christmas.

Yes, recipe please! We have some wonderful berries around here called wineberries. They grow in a "burr" and when ripe they are a deep, rich red and have a tangy/sweet flavor. If I get enough of them off my bushes this year I might try one little pie! Mmmmmmm!

I don't have the DLG, so I've never seen the receipe before. I would be interested to try it one day, when I have the time.

And, I can wait until blueberries are in season around here. I love going out to pick fresh ones by the quart.

Yummy, they look scrum-di-li-umcious.

Here's the recipe for it (Dragonlover's Guide to Pern 2nd Edition):

BUBBLY PIES (as favoured by Piemur and Menolly - that's me throwing that in)
Crust:
1/2 cup butter or margarine,
2 tablespoons granulated sweetening,
2 1/2 cups flour,
1/2 teaspoon salt,
1/2 cup ice water.
Cut the butter into chunks. Combine the dry ingredients in a bowl. Work the butter gently into the dry mixture with a fork until pieces the size of peas form. Sprinkle the water over and work it in. (Do not overwork the dough). Form the dough into a ball.

Filling:
5 cups of blueberries (or 1 20-ounce package, frozen),
1 cup granulated sweetening,
1/4 teaspoon powdered Klah bark, (cinnamon)
2 teaspoons citrus juice,
1-2 tablespoons butter or margarine

Gently toss berries with sweetening and klah bark in a large bowl. Sprinkle citrus juice over mixture. Spoon berries into crust and dot with butter.

FOR SIX TARTS:
1 crust recipe / 1 filling recipe

Divide the ball into two pieces. Work with one at a time. Form each into a ball and press out into a circle. Deivide each circle into six. Roll each piece into a ball. Flatten to 1/8 inch, cut into 5 inch circles and fit six into the tart pans. Fill with Berry mixture. Moisten the edge of each tart and top with second circle of dough. Seal and flute the edges. Cut slits in the top of each tart with a knife. Cover edge of each tart with foil. Bake at 375 degrees for ten minutes. Remove foil. Bake for 8-12 minutes more or until crust is golden. Serve hot.

FOR 12 GATHER PIES:

1 crust recipe / 1 egg / 1/2 filling recipe.

Roll out dough on a floured surface to a 1/8 inch thickness. Using a 3 inch cookie cutter, cut out 24 circles. Lay out 12 on a lightly greased cookie sheet. Divide filling among circles, spooning 2-3 tablespoons into the centre of each, leaving a 1/4 inch border.
Brush the border with egg. Lay the second circle on top of each pie, and press edges together with a fork all the way around. (Stretch the top crust gently to fit if necessary). If desired, mix together 1/4 cup water with 1 1/2 tablespoons sweetening, brush top of each pie with mixture for a sugary glaze. With a knife, cut 3 or 4 short slits in the top of each pie.
Bake at 400 degrees for 20-25 minutes until crust is golden. Slide gently off cookie sheet with spatula. Serve hot.

The only thing I found, whilst typing all that, was that it didn't give the tempature in celcius or farenheight so maybe R'na having cooked them, could say what it was. Please.

The temperatures are in fahrenheit because it would be way to hot to be baking if the temperature was given in celsius.

Brown Re: bubbly pies

Thank you Jube I was going to type it up today. I guess I'll add the Klah recipe. Earth version per DLG ;

2 tbsp sweet ground chocolate
1/2 cup dark cocoa
3/8 tsp cinnamon
1 tsp dark instant coffee crystals ground to powder
small pinch of nutmeg
use 2-4 tsp of the mix per cup of boiling water. Stir well. The klah should be thick like hot cocoa.

There are other recipes in it I want to try yet, ie herdbeast stew.

Thank you folks for answering my question. I wasn't sure myself as it didn't state in the recipe. I'm looking forward to making some this weekend. My mouth is drooling already. I didn't mind helping you out, R'na. My Anne McCaffrey books were within easy range so that I could type it up quickly for you and also because of the different time zones here on planet Earth, I wasn't sure if you were night/early morning where I was in the afternoon here.
