Tell us what you're having for your holiday dinner, or what you would love to have. Even if you don't know how to cook it or make it. Throw in everything that is special to your family, or country. Then when we have a lull in our own festivities, we can come in here and share what others are having.

Yum--

My holiday dinner consists of:

English peas
Mom's mac & cheese
a little dark meat turkey
2 warm, buttered yeast rolls

Along with this, the rest of my family will be having:

The white meat off the turkey
ham
corn
stuffing
dressing
mashed potatoes
giblet gravy
cranberries
candied yams
green beans

And for dessert:

Cream cheese pies (with or without fruit topping)
Sweet potato pies
Pecan pies
Fresh apple cake or apple dumplings
Fudge
Brownies and cookies

The in-laws will be cooking, so it's sure to be delicious. I couldn't predict all the dishes, but there is sure to be apricot braid bread for brunch, and a crown roast for dinner -- complete with the silly little paper hats.

This year I will be fixing my family:
1. Ham with honey glaze topped with marachino cherries.
2. Cornbread dressing, with fresh mushrooms,celery,green onions, and chopped up bits of sauted chicken, mixed all together the day before, so it all mingles together nicely over night.
3. Whole cranberry sauce(one of my favorite holiday foods) chilled.
4. Fresh baked dinner rolls with butter and honey.
5. Broccoli,with melted cheedar cheese sauce on the side.
6.Ripple sliced carrots cooked in maple glaze syrup.
All of this is topped off with desert of course,
7. home made pumkin pie with whipped cream topping,
8. home made chocolate cream pie with whipped topping sprinkled with chocolate curls.
9.Sparkling Raspberry lemon aide ice cold with dinner and cinnamon orange spice hot tea, with desert.

Ok that's mine, tell us yours! Come on make us lick our lips with the promise of the holiday feasting to come.

Boy! You guys must be realy hungry! I just finished getting this all done to goad you all into telling us your faves, and you are all already eating without me. WOW does some of that sound wonderful, but now I am starving, so much for my diet.

Lobster soup

Carpaccio of Beef, garlic butter bread

Spoom (chapmpagne with lemon ice in it)

Filet of Porc with dorito's and French Brie chees
with wild forest mushrooms and wild mushroom sauce
(my own creation)

Not decided on a dessert yet but I'm inclined to a creation with ice(s)
-
Coffee with Belgian Pralines (bonbon) and liqueur for those who want it
-

with this go a dry white Burgundy with the soup
a strong red St. Emilion Bordeaux with the porc
and either some Beuajolais Primeur or an Australian Chardonnay with the dessert (the first if I opt for ice cream and summer fruit)

we're fairly predictable...ham with pineapples and cherries, the ever-present-almost-requisite-at-every-gathering Puerto Rican rice, pies.. Know Mom's making her potato salad, and one of my aunts might bring her noodles. I hope she does - they're delicious.

Han's, Oh my Lobster soup! But what is Carpaccio of beef, for this small town girl who has not heard of this before? The mushrooms with sauce, divine. Spoom ummmm! Sounds great but, no more alcohol for me. But instead I would dearly love at least one cup of your coffee with dare I say it "PRALINES"OOOOH. What was that Ghyle said about ambrosia! But are you going to make it to the coffee, with all of that wine between meals? Sounds great ,just don't stand up to quick...

Greenrider Tresa, sound like you have all the wonderful parts of a great holiday meal. I haven't had Puerto Rican rice with pork since I was in Chicago some thirty some years ago, great eating. Noodles sound good too. Happy eating!

Christmas pudding is a fruit-based pudding that's an English delicacy. It only comes out at Christmas time, and I love it; it's very rich and filling.

The beers are as cold but better than in America.

Maelin, a Carpaccio is a classic Italian starter dish.
Sometimes you see them made with thinly shaved salmon slices (or Tuna) but the clasic one and mine are made of very thinly shaved slices of raw beef fillet served with a olive oil, aceto balsamico, garlic, raw onion rings, pine tree pips, alfalfa, a few lettuce leaves and shaved Parmesan cheese.
A carpaccio can also be made with smoked beef or even ostrich meat; another favourite of mine is made with smoked duck breast and it is wonderful too.

Here's a picture of how mine will look like, although I like to add some alfalfa or cress and a few letuce leaves under the meat so you don't end up with something flat but with a little fluffy" mountain

For those not "in the know": cooking is one of my favourite passtimes/hobbies. I love to cook; I especially love to cook with wine -- sometimes I even out it in the food

If I hadn't become what I am now I could have been a chef... I enjoy cooking for others and am delighted at chances to cook 7 or 9 course dinners for others my wife's and her friends. I don't particularly enjoyu having to cook and be a guest at my own table. I'd rather just cook and make a great meal for others

turkey,
2 types of stuffing, chestnut + something else
bread sauce
possibly sausages and bacon (can't remember)
Roast spuds
sprouts + other veg

christmas pud or fruit salad.

I've amde the christmas cakes this year! poss. v.v.v. badly!

Hans, the Carpaccio is it always raw, or is that just the beef kind? I realy don't like raw anything. But the rest sound wonderful. I also love to cook, but now I have to do everything with the fat, salt and sugar in mind we have some health conserns to worry on. So most of our meals are slightly changed from the way they are usualy prepared. I pride myself in making meals lower in these things and having them taste normal.

Maelin, the original carpaccio is most often with raw meat yes; but sliced very thinly. It's raw because it is a cold starter. A duck breast carpaccio is usually smoked meat but I've never come across a carpaccio with warm meat.

Well we are planning to have a bbq at my sister's (she has a pool).

Probably will have some snags, lamb chops, steak and chicken fillets....... and potato bake, and a bit of salad as well

We're having our Christmas dinner on Christmas Eve:

For starters: Rosolli a. k. a. herring salad, with cubed pickled herring, carrots, beetroot and Russian pickled cucumber, served with sourcream sauce.

Cold-smoked salmon and "gravad" salmon, smoked whitefish and whitefish roe flavored with finely chopped onion and pepper.

Liver pâté served with parsley.

Main dish is usually either turkey or a ham roll, usually wrapped in mustard and breadcrumbs. We're too few to eat a complete ham or turkey.

Rutabaga and carrot casseroles.

Sweet rutabaga cubes, boiled peas.

For afters we usually have a fruit salad served with vanilla ice cream.

Yum!

its a rich fruit cake with LOTS of alchohol topped with marzipan and royal icing ( I think that's similar to frosting-its got eggs in it!)

Edith, Thank You, we went and looked at your cake Picture, and instructions. That is what we call here a fruit cake, only they are much smaller. Some people soak them in rum for months, before the holidays. Then they give them out as gifts. I am not sure how they make or soak them though. Thank you for the little trips to your side of the world, very interesting!

Chris what is a "snags?" The rest sound great, I forget that it is summer at this time of year where you are. That sounds great to us, we love the heat, today we went out shopping and it was 78 lovely degrees warm here. We always wanted to go to the beach for Christmas. Set up our tree out on the sand, but the rest of the family had a total fit. So we haven't done it ...yet!

Granath, I never thought of having fish for the holidays. The fish that you discribe sound wonderful, especially for having my tree on the beach. I'll have to remember it, if we ever get the chane for christmas on the sand

Haven't answered this yet.

Christmas Day, we are going to the hubby's Nan's for dinner. Turkey, yorkshire and veggies. I am not looking forward to it, as in my opinion the woman over-cooks the veg, and drowns everything in gravey (I am not a big gravey person)

Growing up.... Christmas Eve was meatless. We had perogi, bambalki, smelt, honey, poppy seeds,sauted onions,and a Christmas Waffer on the table. Christmas Day was either turkey or venison, sometimes both, with corn, mashed potatoes, green beans, rutabega (swede) and home made bread.

Ghyle, you are going to laugh, but I thought a snag was a fish, you know hook them in the water and snag them out. Fresh fish for diner. But sausages never in a million years. Thank you for you international information, ummm I love sausages. I never thought about them for Christmas, maybe I should!
